171 findings from 39 labs, one sentence each, with the numbers and how many recipes they rest on. Each links to the page with the chart. Nothing here is a new calculation: these are the differences the lab pages already show, gathered in one place and sorted by how large they are against how much recipes vary.
The largest of each kind first, then the largest of the rest, one per lab.

Two groups of one lab's recipes are compared ingredient by ingredient, in grams per 100 g of flour (or per egg, per 100 g of rice: whatever the lab divides by). An amount counts as different when the two medians sit at least a third of the lab's middle half apart and a rank-sum test gives a z of at least 3, which chance passes about once in 370 tries. Whether an ingredient is used at all counts when the shares are at least 25 points apart, again with a z of 3.
Left out here, though the lab pages show them: salt, since many recipes give “a pinch”; title words that name an ingredient and differ only in using it (“vegan” pancakes use no egg); and style parts the style is named for. Shares round down, so “76% more” is never an overstatement.
